At Dredge, we believe great food begins
with a deep respect for the land, the
water, and the community that brings
it all together. Inspired by the rich trad-
itions of the Chesapeake Bay, we pair
fresh seafood and locally inspired
dishes with bright cocktails, refreshing
beers, and thoughtfully curated wines —
all served in an atmosphere that is welcoming, vibrant, and unmistakably Irvington.
Since opening our doors in 2019, Dredge has become a gathering place for locals and visitors alike, building on the success of Byrd’s Seafood Truck, which earned the title of Best Food Truck of Virginia from 2017–2020. The restaurant’s spirit is also deeply influenced by Bryan’s late stepfather, Ray Reynolds, a well-respected local waterman whose life on the Chesapeake instilled in Bryan a lasting respect for the Bay’s working heritage and the people who harvest its bounty. That connection to the water continues to shape Dredge’s commitment to local seafood, authenticity, and community tradition. Our passion for hospitality and dedication to quality have also been recognized with honors such as Best Restaurant of Virginia and Best Chef of Virginia by Chesapeake Bay Magazine.
Dredge is proudly family-owned and operated by Bryan and Nichole Byrd, who remain deeply hands-on in every aspect of the restaurant. As longtime Irvington residents raising their young family here, they draw constant inspiration from the beauty of the Northern Neck and the people who make this community special. For them, Dredge is more than a restaurant — it’s a labor of love rooted in genuine hospitality and a desire to create memorable experiences for every guest who walks through the door.
With more than 25 years in the restaurant industry, Bryan’s culinary journey began as a teenager and evolved through years of experience, including a formative period in Key West, Florida, which continues to inspire the bold flavors and coastal influences found throughout the menu today.
For Bryan, cooking is both passion and craft — an opportunity to create dishes that are thoughtful, surprising, and deeply satisfying. At Dredge, every plate tells a story — of tradition, creativity, and a shared love for great food and genuine connection.
